As asked, Has anyone found a method of changing the size of the Taskbar and its Icons as with the older versions of Windows

The registry hive is :
Computer\HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Explorer\Advanced
The subkey to modify (or add as Dword32) is TaskbarSi
Dword32 Default value is 1
Smaller size is 0
I think an explorer restart might not be enough so you might need to sign out or restart OS.
Explorer restart is good enough.
It's too small for my laptop but it works.

By enabling or disabling certain 8 digit "ID numbers", you can turn Windows 11 features ON or OFF. In many cases, Vivetool is the "only" way to enable/disable certain features. Make sure you use 3rd party backup software, before you start "tweaking" Windows. Official tutorial...
