In theory, I see no reason why this would not work. Macrium does it so that you can backup and restore systems (notebooks especially) via WiFi. For example, I have a Lenovo laptop with no Ethernet adapter. It's WiFi 6e only, which actually turns out to be faster than Gigabit Ethernet.
Just bear in mind that this only works for WinRE based media, not WinPE. There are some articles on the web discussing how to add WiFi support to WinRE yourself, but admittedly I've not tried that. Although I am intrigued and have it on my bucket list to try .
But, coming back to your initial question: I'm not aware of anyone else taking advantage of this capability. I'm sure that some other programs must make use of it, but I don't know of anyone other than Macrium.

The five 8TB drives and three 512GB SSDs are part of a DrivePool using StableBit DrivePool software. The three SSDs are devoted purely to caching for the 8TB drives. All of the important data is stored in triplicate so that I can withstand simultaneous failure of 2 disks.
