HI there

I've recently started using the Mail app in windows 11. I'm wondering if it is an interface to webmail, or it actually downloads my mail to my computer.

If it downloads mail, then where does it store it ? ( I don't want my hard drive to fill up with junk)

I tried a google search but found a lot of conflicting information !!

It's no different to other email clients - if you use POP the messages are downloaded to your computer, and if you use IMAP they remain on the server. Nothing to do with webmail at all.

How do i tell which i used, i set the mail up from the mail interface under 'add account' and choose either 'google' or 'outlook' then logged in under those systems own log-in interface.

The choice was made when you first set those em accounts up but, with both Outlook and Gmail, unless you went out of your way to set them up as POP accounts then both will be IMAP accounts, so your incoming messages by default remain on the server. The app's Actions menu gives you the option to save individual messages to your computer.
