Since I got this yesterday I now have the Kernel-mode Hardware-enforced Stack Protection is off. Is it just a simple 'turn it on again' situation?

I took the plunge. It looks to be still on. Looking at it, there are possible causes, such as driver updates (I can see none in WU) and I don't believe I've installed anything direct from ASUS (they seem to not be updating much on this 11th Gen).

Only other possibility is the Microsoft Security update KB5007651 - I already had Virtualisation on (I run HVCI). Things look OK.
