This is purely legal bs.
If MS sanction bypassing and something goes wrong, then they could be sued.
They could sanction it if they wanted , all it would take is adding a disclaimer to the installer warning the user if they are installing on unsupported hardware, if anything goes sideways they cannot be held responsible , so simple.
And I would think that anyone with half a brain installing on unsupported hardware already knows this.
