My desktop systems use Asus motherboards.
As far as I know, Bitlocker wasn't enabled by default on either. There is some question of timing: the X570 motherboard pre-dates 11. One of its BIOS updates had the sole purpose of enabling the settings required for an 11 install. The Z690 motherboard had its initial release at about the same time as 11. I don't recall whether its out-of-the-box settings enabled the 11 stuff.
The unsupported laptop I have also didn't enable bitlocker by default. It was made in 2017, though.
Perhaps I'm foolish in avoiding Bitlocker, but I'll continue on that course for the moment.
