You can set the font and size and save it for all documents. I changed mine from Calibri 11 to Times New Roman 12, and it always starts all of my documents with this setting.

Copy and Paste are together, at least on mine they are. I never use the buttons in the toolbar, i always hit Ctrl-C to copy and Cttl-V to paste.

I'm not sure what you saying here. Are you talking about when you hit File > Save? If you are talking about it saving to OneDrive, i could see that if you don't use onedrive. I work in a pretty large company and we have 20,000+ employees and we use OneDrive for our stuff. And I use OneDrive at home as well.
I've been working professionally in the IT space since 1997 and have used every version of Word for the last nearly 30 years. Aside from the ribbon bar design reconfiguration, I haven't had that much that I feel is really different in Word in all of this time. And the Ribbon has been around since Office 2007 I believe, so I've had many years to adjust to that....so I may simply not recall how things worked prior to that.
